Creamy Black Bean Tomato Soup

I found a recipe for Creamy Black Bean Tomato Soup the other day and I figured I would give it a try. I already make Creamy Black Bean Soup, and Tomato Soup and love both of them...so I figured I would enjoy this also.

So here is the recipe:

3 cans of diced tomatoes, undrained
2 cans of black beans, drained and rinsed
1 medium onion, diced
1 tbls minced garlic (to taste)
5 cups chicken broth
1.5 tbls chili powder
1 tbls cumin
hot sauce (to taste)
salt and pepper

Top with your favs: cheese, sour cream, etc.

You saute the onion and garlic for about 4 minutes in some EVOO. Add the rest of the ingredients and bring to boil. Reduce heat and simmer for 10 minutes. Then use or immersion blender to cream the soup (or transfer to regular blender).

I will say that it need something. Maybe more chili powder? Maybe Hidden Valley Ranch seasoning? I didn't add any salt...so maybe salt? Let me know what you think and if you zazz it up.

  1. Is it 'beany'? I detest beans, but want to find a way to eat more of them...what's the more powerful taste/texture - beans or tomatoes?

  5. I make your black bean soup recipe (a little changes) at least every 10 days. Everyone in my family loves it and they love you for posting the recipe...LOVE TO AMY!!!! Ok, maybe next time you try this one, make at least one of the cans of diced tomatoes rotel and see if it kicks it up a notch. And yes, add a little more chili powder and maybe some salt.

  8. I love this Himalayan Pink Sea Salt you can get in a grinder. Gives just the right "salt" touch to stuff without overpowering anything. This sounds really good as I like both of those soups and together, well... they must be good.

  9. Amy-it is definetly more "tomatoey"...rather than more beany. In fact, next time I was thinking about adding another can of beans to make it more beany. I think you should give it a try!
