Here are my sweatpants. Two looks in one!
The one bad thing about these is that they are made really thin...to give the appearance of age I suppose. Well, I am a little concerned about my thigh friction wearing a hole in them. I will keep you posted.
For the life of me I can't remember if I have shared this recipe with you. It is for pulled (or shredded) pork tacos. I have this wonderful crock pot recipe book. It was made for me. Full of glossy pictures and simple recipes.
This recipe is SO band friendly. Calorie, protein, and going down the shoot wise. I can eat it for leftovers the next day and because it is so juicy it never gives me problems.
Pulled Pork Tacos
You will need:
Crockpot (I use my 4 quart I think)
2 pound pork roast
1 cup of your favorite salsa (I use taco bell thick and chunky)
salt and pepper
2 bell peppers (pick your favorite colors), sliced into strips
That's it!
Okay. You put the roast in the crock pot. Salt and Pepper it (I accidentally forgot this yesterday and it turned out perfect anyways, so if you are cutting back on salt...skip it). Pour in one cup of salsa. Dump in sliced bell peppers.
Cook on low for 5-8 hours. I go about 7ish hours.
Then, when you are ready to eat, get to forks and shred it while it is still in the crockpot. OH MY GOSH. It is so juicy and tender.
I then serve with all the fixins: sour cream, guac, shredded lettuce, diced tomatoes, cheese, whole what soft taco shells.
Even with great restriction I can eat one soft taco. Because I like to play it safe at work, I just bring about 3/4 cup of the pork and some cheese. YUMMO!
I just find it amazing how flavorful and juicy it is with just one damn cup of salsa!

I wish I could eat that. I get stuck every time I eat pulled pork... even before I had really good restriction. That is one of my favorite foods!

ReplyDeleteOh I just had similar tacos from Chili's yesterday for lunch (and dinner - leftovers, you got to love them!). I don't eat the flour tortillas any more, so I really enjoy the soft corn tortillas. Just pop them in the microwave wrapped in a bit of damp paper towel, heat for about 30 seconds, and presto! Warm flexible corn tortillas. Really good for fish tacos too.

I remember when you posted about first discovering your collar bones and now they are like a frame to your whole upper body. It is amazing how much this last 50 pounds has changed you!!!
